Dill is an annual plant that grows to about 70 cm - 1 m t. The flowers, the dill crowns, are large, yellow and flock-flowered. With its very characteristic taste, dill has its rightful place in Swedish summer food and we in Scandinavia are probably the ones who use dill most frequently in the world. Both dill leaves and dill seeds are used as a spice. The taste is enhanced during cooking. The dill leaves are harvested until flowering, then they get worse. They can be frozen, used fresh or dried. The leaves are less bitter and milder in taste than the seeds. The seeds are harvested when the flower heads begin to turn brown. Dill goes well with dill stewed potatoes, boiled new potatoes, crayfish, herring, fish gratin and dill meat.
